We Now Render Our Own Bison Tallow (And Every Jar Got Better)

The short answer: for the first time, every product we make is built on tallow I render myself — from hand-trimmed bison suet, in stainless steel, with distilled water and a mineral-clean sea salt, low and slow for most of a day, washed until the water runs clear. The first block that came out of that process was, honestly, the best tallow I have ever touched. It's now in every jar.

I want to show you the process — because the effort is the point, and because I think you deserve to know what your skin is getting. I'll keep a few specifics to myself (the exact ratios, temperatures, and timing took a lot of testing to get right), but nothing about the care is a secret.

It starts with the right fat

Not all fat on an animal is the same. The fat we use is suet — the dense, waxy, snow-white fat from around the kidneys, sometimes called leaf fat. It's the most prized fat on the animal: higher in stearin than any other, cleaner, firmer, with a higher melting point. For centuries it was the fat set aside for the finest tallow. Then the slowest part: trimming by hand

Before anything is heated, every piece of suet is trimmed by hand — any tissue, membrane, or anything that isn't pure waxy white fat comes off. This is the longest step in the whole process and it's the one most producers skip, because it's tedious. It matters because what you leave in the pot ends up in the tallow: impurities are where off-scents and off-colors come from. Clean in, clean out.

A gentle, wet render — in stainless steel only

The trimmed fat goes into stainless steel with distilled water — no chlorine, no contaminants — and a small amount of sea salt from ancient mineral deposits chosen for what it doesn't carry: no microplastics, no heavy metals. Then it's held at a gentle temperature, well below boiling, for most of a day. Low heat is the whole philosophy: hot, fast rendering scorches fat and degrades the fat-soluble vitamins that make tallow worth using on skin in the first place. Nothing in this process ever touches plastic.

Filtering, chilling, and washing until the water runs clear

The liquid fat is filtered through unbleached organic cotton cloth — no dyes, no glue at the seams — then chilled until it sets into a solid block. And here's the step that separates good tallow from great: it gets washed again. The block goes back through fresh salted water, is chilled again, and the layer at the bottom where impurities settle is scraped away. Repeat until the water comes out clear. What's left is a dense, pure-white block with almost no scent at all.

A brief, gentle finish

At the very end, the block is warmed just enough to evaporate any remaining water — briefly, so the fat's nutrients aren't degraded. Water is what invites spoilage; removing the last of it is what makes the finished tallow naturally shelf-stable without preservatives.

What changed in the jar

Every product now uses this tallow, and the difference shows up in texture first — smoother, cleaner, better-behaved in the jar — then in scent, which is milder than anything we've worked with. It's the same hands doing the rendering that pour the jars, and I think that continuity is the quiet secret of the whole thing: nobody who outsources their tallow trims it piece by piece.
